GoodShoog™ Creamy Rice Pudding

Rich, comforting, and naturally sweetened with GoodShoog™, this stovetop rice pudding is the kind of classic dessert that feels like a warm hug. Short- or medium-grain rice gives it an especially creamy texture, and a handful of raisins adds just the right amount of chew. Simple ingredients, slow stirring, and a little patience are all it takes.

Ingredients

  • ½ cup uncooked white rice, preferably short- or medium-grain
  • 4 cups whole milk
  • ½ cup GoodShoog™
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon (optional)
  • ¼ cup raisins (optional)

Instructions

  1. Rinse the rice briefly under cool water and drain.
  2. Combine the rice, milk, GoodShoog™, and salt in a medium heavy-bottomed saucepan.
  3. Bring to a gentle simmer over medium heat, stirring frequently to prevent scorching.
  4. Reduce heat to low and cook 30–40 minutes, stirring frequently, until the rice is very tender and the pudding is thick and creamy.
  5. Remove from heat and stir in the vanilla and cinnamon, if using.
  6. Stir in raisins, if desired.
  7. Let stand for 5–10 minutes before serving. The pudding will continue to thicken as it cools. If it becomes too thick, stir in a little additional milk.

Tip: For an especially creamy pudding, use short-grain rice and keep the heat low enough that the milk barely simmers.
