Ingredients
- ½ cup uncooked white rice, preferably short- or medium-grain
- 4 cups whole milk
- ½ cup GoodShoog™
- ¼ tsp salt
- 1 tsp vanilla extract
- ½ tsp ground cinnamon (optional)
- ¼ cup raisins (optional)
Instructions
- Rinse the rice briefly under cool water and drain.
- Combine the rice, milk, GoodShoog™, and salt in a medium heavy-bottomed saucepan.
- Bring to a gentle simmer over medium heat, stirring frequently to prevent scorching.
- Reduce heat to low and cook 30–40 minutes, stirring frequently, until the rice is very tender and the pudding is thick and creamy.
- Remove from heat and stir in the vanilla and cinnamon, if using.
- Stir in raisins, if desired.
- Let stand for 5–10 minutes before serving. The pudding will continue to thicken as it cools. If it becomes too thick, stir in a little additional milk.
Tip: For an especially creamy pudding, use short-grain rice and keep the heat low enough that the milk barely simmers.
